What is hanging weight?
Hanging weight is the weight of the animal after harvest and before the beef is cut, trimmed and packaged.
Hanging weight is not the amount of packaged beef you take home.
A general estimate is that packaged beef will be around 60–65% of hanging weight, depending on your cut selections, amount of bone retained, trimming and other processing choices.
